Juga dipakai daun pepaya muda untuk melembutkan daging, dan kapur untuk membersihkan jeroan.
Kompleksnya bumbu yang dipakai ternyata sudah dipikirkan oleh para leluhur ratusan tahun lalu. Selain untuk rasa dan aroma, ramuan bumbu ini juga berfungsi sebagai penawar zat yang terdapat dalam hati, babat, jantung, dan limpah yang banyak mengandung kolesterol. Pengolahan coto secara khusus menggunakan kuali tanah (uring butta) sebagai wadah masaknya.
Di setiap depot coto Makassar, kita akan menemui beberapa warung dengan asuhan daeng masing-masing. Misalnya, asuhan Daeng Kulle, asuhan Daeng Tata, asuhan Daeng Sirua, dan lain-lain. Sementara apa bedanya coto dan sop Makassar? Jika coto sudah mempunyai bumbu yang lengkap, jika sop punya flavour rempah yang lebih kuat. Cengkih, pala, dan merica terasa lebih menonjol. Sedangkan kuah dasarnya sama, diracik dan disajikan dengan kuah kental. Dalam sop juga ada isi tambahan yaitu perkedel dan sun yang dipotong pendek. Di Daeng Kulle, surabayastory merasakan, meski tetap otentik rasanya, namun terasa sedikit disesuaikan dengan lidah masyarakat Surabaya. Rasa kuah yang dalam, sedikit “ditipiskan” agar rempah tak terlalu “menyengat”. Akomodasi lain adalah adanya kecap manis yang disiapkan.
Di Daeng Kulle, coto maupun sopnya sama-sama sedhut (enak sekali). Meskipun kuah coto dan sop keruh karena banyak rempah, namun rasanya sangat bersih. Yang juga menarik, tak ada sisa minyak yang tersisa di bibir setelah mencecapnya. Ini berarti lemak jenuhnya sudah disaring habis. Penampilan isinya juga menawan. Potongan daging, hati, dan paru sangat rapi dan diperhatikan.
Beda Coto dan Sop

Namun, jika mau makan enak, mengapa harus setengah-setengah? Yang penting adalah bisa mengatur ritmenya. Buras dan ketupat di Daeng Kulle enak sekali, pulen dan gurih. Bagi laki-laki di bawah 40 tahun, paling tidak akan mengisi perutnya dengan 3-4 buras atau ketupat. Bagi para wanita atau yang agak jaim, biasanya hanya mengambil 1 potong saja.
Makanan ini akan semakin lengkap dengan citarasa bawang goreng, bawang daun, jeruk nipis, plus sambal tauco. Bagi pecinta gurih berlebih, ada baiknya ditambah garam meja sendiri yang tersedia. Disantap hangat, sedap.

Selain proses, depot ini tampaknya terus berbenah hingga mendapatkan hasil seperti sekarang ini. Dari pojok Jl. Slamet kemudian bergeser ke depan Grand City saat ini (waktu itu masih tanah kosong dengan pagar seng). Di sini dua tahun, lalu tergusur. Pindah ke atas trotoar Rumah Sakit Gigi dan Mulut Unair. Lagi-lagi tergusur hingga menemukan tempat di Achmad Jais hingga sekarang. Sebuah perjalanan panjang yang melelahkan.

Selain coto dan sop, minuman segarnya juga berkelas. Es Pallubutung, es pisang ijo, sampai es kacang merahnya menawan. Untuk yang lebih cair, tentu saja ada es markisa asli dari Makassar. Es pisang ijo atau es pallubutung keduanya sama-sama nikmat. Sama-sama diberi serutan es yang menggunung, bubur sumsum yang sangat lembut dan gurih, mutiara, sirup merah khas Makassar. Bedanya, kalau es pisang ijo pisang kapok dibalut adonan hunkwee berwarna hijau, kalau es pallubutung, pisangnya dikukus langsung dan disajikan dalam keadaan terpotong. Di sini akan terjadi paduan antara es sirup yang segar, gurihnya bubur sumsum, dan pisang kapok yang pulen dan manis.
Di depot ini, es kacang merahnya juga menggoda. Kacang merahnya empuk namun tidak pecah ketika disajikan. Dilengkapi dengan cincau, es serut menggunung serta sirup gula aren.
